MIAMI, Florida (CNN) -- South Florida chefs are marrying the colors and spices of Caribbean cooking with some traditional Florida stand-bys to create what is becoming a regional favorite: "floribbean" food.

"This cuisine is the marriage of the familiar and the unfamiliar," says chef Allen Susser, a member of the so-called "mango gang" of Florida chefs preparing "floribbean" food. Susser has been cooking with Caribbean recipes for over a decade.

"Floribbean" food is lighter version of its Caribbean cousin, with less frying and fewer oils involved in the preparation.

"Floribbean" favorites include rock shrimp with roasted corn relish and mango ketchup and Florida grouper served with chayote squash.
